Mix together 12 oz. of crumbled extra firm tofu (or soy ground round) with 1 tbsp chili powder, 1 tsp ground cumin and 2½ cups of thick salsa. Heat in microwave until warm. Fill four 8-oz. insulated containers and send with grated cheese, green pepper strips (in container lined with paper towel) and soft whole-wheat tortilla wraps.
Make-ahead tip Line an insulated container with a freezer bag; fill, freeze then remove, label and seal for a perfect-sized portion that’s ready to reheat.
