Spring is finally here! After getting snow for much of April, we’re finally having a gorgeous weekend here in my neck of the woods. (And it’s been a long time coming!) That being said, the forecast is now calling for rain. I’m okay with that though; the rain helps melt the remaining snow and will clean things up a bit. The rain also brings flowers! You know the saying, “April showers bring May flowers”? Let’s hope that’s true.
With just a few ingredients, this April Showers-themed lunch is super easy to make and is the perfect meal on a rainy day.
What you’ll need:
1. Spread your pita open very gently and fill with lunch meat of your choice. You could also put other sandwich fillings in, like lettuce, cheese, sliced veggies, etc. Whatever you like! Place this pita sandwich, cut side down, on your plate.
2. Take your slice of yellow bell pepper and place underneath the sandwich for an umbrella handle.
3. Finally, grab your handful of blueberries and spread them around the plate for raindrops.
This lunch really couldn’t be easier to make! It’s a nice healthy lunch and your kids will just love it.
