Make your next Mexican dinner or party a hit with the kids when you serve up Ice Cream Tacos for dessert. A waffle makes up the ’shell’, an ice cream and marshmallow concoction is your ‘meat’ and the possibilities for ‘toppings’ are endless – think chocolate sauce, chopped nuts, fresh fruit, sprinkles and chocolate chips.
Here’s the easy recipe and directions to make eight of your own Ice Cream Tacos.
Ingredients
• 8 frozen round waffles, thawed
• 1 quart chocolate ice cream, softened
• 1/2 cup mini marshmallows
• 1/2 cup hot fudge sauce
• 8 maraschino cherries
To start, warm your waffles but do not toast them. Fold each waffle in half and set in a 13″x9″ baking dish, open-side up, keeping the rows tight so the taco shape is maintained.
In a large bowl combine the ice cream and marshmallows before spooning evenly into the waffle shells. Cover the baking dish and freeze until ice cream and waffles are firm. Before serving, drizzle with warmed hot fudge sauce and any other additional toppings. Top with a cherry and dig in!
