Grilled Peaches with Almond-Mint Pesto
This unusual, crowd-pleasing dessert idea is also great with strawberries and orange sections.
Ingredients
ALMOND-MINT PESTO
- 1 1/2 cups washed, loosely packed mint leaves
- 1/2 cup unsalted almonds
- 1/3 cup apple juice
- 1/3 cup lemon juice
- 1 tbsp sugar
GRILLED PEACHES
- 4 firm peaches, halved horizontally, pitted and cut into 4 horizontal slices
- 2 tbsp melted butter
- 1 tbsp sugar
- 3/4 cup Almond-Mint Pesto
Directions
ALMOND-MINT PESTO
- Using a food processor or blender, process mint and almonds on pulse until the mixture is roughly chopped.
- With the machine running, add juices and sugar. Transfer to small bowl and cover until needed.
GRILLED PEACHES
- Preheat barbecue to high heat.
- Brush peaches with butter and sprinkle with sugar.
- Grill, about 4 to 6 minutes per side, until warm and lightly charred with grill marks.
- Just before serving, drizzle peaches with pesto.
