Pesto-Marinated Prosciutto-Wrapped Haddock

The prosciutto wrap keeps fish moist and the pesto adds tons of flavour. Let your junior chef help wrap the fish in prosciutto.

time:Prep & cooking time: 20 minutes

ingredients

  • 4 6-oz boneless haddock fillets
  • 1/4 cup pesto
  • 8 slices prosciutto (or enough to wrap fish entirely)

directions

  1. Marinate fish in pesto for up to an hour.
  2. Preheat barbecue to high.
  3. Wrap each piece of fish with prosciutto, covering completely.
  4. Lightly brush prosciutto with oil to prevent fish from sticking to grill.
  5. Grill fish for 5 minutes per side, or until fish flakes slightly. Reduce heat slightly if you are getting flare-ups from the barbecue.
