Pesto-Marinated Prosciutto-Wrapped Haddock

- 4 6-oz boneless haddock fillets
- 1/4 cup pesto
- 8 slices prosciutto (or enough to wrap fish entirely)
- Marinate fish in pesto for up to an hour.
- Preheat barbecue to high.
- Wrap each piece of fish with prosciutto, covering completely.
- Lightly brush prosciutto with oil to prevent fish from sticking to grill.
- Grill fish for 5 minutes per side, or until fish flakes slightly. Reduce heat slightly if you are getting flare-ups from the barbecue.
