- 1 ½ tsp soy sauce
- 2 tbsp pineapple juice (from the can)
- 1 tsp cornstarch
- 1 tbsp sunflower oil
- ½ cup ground pork (or chicken)
- 2 scallions, thinly sliced

- 2 tbsp canned corn, drained
- Mix together the ketchup, soy sauce, pineapple juice, cornstarch, and 4 tbsp water in a small bowl. Set this sauce mixture aside.
- Heat the sunflower oil in a wok and stir-fry the pork or chicken for 3 minutes, breaking it up well as you cook.
- Add the scallions and red pepper and cook until the vegetables are soft and the pork is browned, about 3 minutes longer. Add the pineapple, corn and sauce mixture and cook until the sauce is bubbling and thickened, 1–2 minutes. Serve with rice.
