Chocolate Yogurt Mousse Cups

Oh so light and chocolatey good. This healthy dessert is destined to become an everyday essential for your chocolate cravings. Draining the low-fat yogurt overnight gives it a wonderful rich smoothness and makes the mousse lovely and thick.

On the table: 15 min. + overnight draining + 1 hour chilling

ingredients

  • 2 cups plain low-fat yogurt
  • 2 oz good quality bittersweet dark chocolate + extra for shaving
  • 3 tbsp cocoa powder
  • ½ cup egg whites (approx. 4 egg whites)
  • ¼ cup sugar

directions

  1. Drain yogurt in refrigerator overnight in a cheesecloth-lined colander placed in a bowl.
  2. Melt chocolate over a double boiler. Remove double boiler from heat.
  3. Whisk drained yogurt into chocolate.
  4. Sift cocoa into chocolate mixture then whisk to combine.
  5. Beat egg whites in a clean bowl, adding sugar 1 tbsp at a time. Beat until whites are glossy and form firm peaks.
  6. Fold the whites into chocolate mixture.
  7. Spoon the mousse into serving dishes.
  8. Refrigerate 1 hour to set. Garnish with chocolate shavings when ready to serve.
