As the evenings get cooler, warm your family up these satisfying and comforting meals.
Curried Lentils with Raisins
This vegetarian dish combines good-for-you lentils, raisins and subtle spicing. If using basmati, rinse and drain well before cooking to remove starch.
Saucy Shrimp with Feta
Serve this speedy seafood main with rice, buttered noodles or crusty bread, and a side salad.
Hearty Veggie-Cheddar Soup
Sneak in the good stuff with the ultimate kid-pleaser: cheese! Use your family’s favourite mix of chunky frozen vegetables for this main-meal soup ““ we love a combo of broccoli and cauliflower ““ and choose old orange cheddar for best flavour (even cheese wimps will find it just right). Serve with Quick-Fix Cornmeal Biscuits.
Rustic Sausage-Polenta Lasagne
Kids love sausages and carbs, you love easy sophistication. Pull it together fast by thawing the sausages in the microwave, in a shallow dish covered with paper towels, on Defrost for 4 to 6 minutes before using. Ready-made polenta usually comes in 2-lb (1-kg) tube-shaped packages (look for it near the cornmeal in your supermarket). You’ll need half a package for this recipe, but if well wrapped, the remaining polenta can be stored in the fridge for up to 1 week.
