6 Favourite Holiday Cookie Recipes

I don’t know about you, but one of my fondest holiday memories is of the tins upon tins upon tins of cookies that would come out of my family’s kitchen. My mom would bake batches and batches, and my grandmothers would also bake batches and batches, and my aunts would bake batches and batches and there were eventually so many cookies and bars and squares that the counters and the fridge would literally be overflowing.

Baking Christmas cookies, be they gingerbread or shortbread or sugar cookies, are simply one of the easiest and best ways I know to get into the spirit of the season. Here are some of my 20-Minute Supper Club Faves.

Butterscotch Bars
Chewy, buttery and full of nuts, who can resist a brown sugar brownie?

Mary’s Tablet
The Scottish take on fudge. It’s rich and sweet and absolutely sinful.

A truffle? Filled with cookie dough? Ridiculous. And ridiculously good.

Macadamia Nut Brittle
The combination of salty and sweet is what makes brittle a winner every time. This golden stuff is also a lovely gift: just wrap up a batch and bring it as host gifts, teacher presents, gifts for neighbours and anyone else you want to impress.
