Fun with Food: Rainbow Cheesecake

The view from our window here at the CF office has been grey and rainy for the past few weeks, but any time the weather starts to get us down we remember one important thing: you can’t have a rainbow without a little rain. Or so we thought.

Enter Rainbow Cheesecake, the colourful treat cooked up by Macheesmo over at Tablespoon.com. The total time for this dessert is eight hours (45 minutes to prep, plus bake time and chilling time), so it will be an exercise in patience—but we think the end result is totally worth the wait.

What you’ll need:
Crust
• Crushed graham crackers
• Sugar
• Unsalted butter
• Cinnamon
• Salt
Cake
• Cream cheese
• Sugar
• Vanilla
• Eggs
• Sour cream
• Heavy cream
• Salt
• Food colouring (multiple colours)*

This is a great recipe for junior chefs, who can help mix ingredients. And even the littlest chefs will love helping Mom or Dad tint and pour batter. If you’re reluctant to use food colouring, try tinting your batter with fruit juices (raspberry, blueberry) for a more natural and flavour-boosting cake.
